Why does No and Low Fat food taste awful?

Because fat is very effective at carrying the organic molecules to our sensors (mostly smell) which comprise flavor. And because many people trying to prepare such food haven't bothered to learn seasoning and spices.

well, they say fat has a tasty flavor. it also adds texture to the food you eat. flavor and texture make for a more enjoyable eating experience.

also, you already know how those foods are supposed to taste (from previous experiences) and so this new taste tastes wrong by comparison.
