Why does low fat food cost more when you get less?

Why should I have to pay a dollar more for low fat chocolate chip cookies when I'm getting less fat?

The law of supply & demand....you are willing to pay more for it, so they charge more..

There are more processing steps to remove the fat thus adding to the cost...or maybe it's just because 'fat free' is in vogue these days and they charge more just because they can.
